Wash and thinly shred cabbage with a sharp knife and place in a bowl.
Add the sliced fennel, apple chunks and pumpkin seeds and lightly toss.
Mix tahini with the extra virgin olive oil, apple cider vinegar and lemon juice.
Pour over salad and enjoy!
