Crunchy Red Cabbage & Fennel Salad

A refreshing crunchy salad, ideal for these Summer days, packed with vitamins, minerals, antioxidants and lots of flavour!

 

 

Ingredients

 

  • ¼ head red cabbage (shredded)
  • 1 fennel, thinly sliced
  • 1 red apple, cut in small chunks
  • Pumpkin seeds
  • 4 tbsps tahini
  • ½ tbsp extra virgin olive oil
  • 1 tbsp raw apple cider vinegar
  • 1 lemon (juiced)

 

How to:

 

Wash and thinly shred cabbage with a sharp knife and place in a bowl.

Add the sliced fennel, apple chunks and pumpkin seeds and lightly toss.

Mix tahini with the extra virgin olive oil, apple cider vinegar and lemon juice.

Pour over salad and enjoy!
