In a glass bowl, mix the cooked lentils with the diced peppers, tomatoes, celery, green onions and rocket leaves.
Prepare the dressing by mixing the extra virgin olive oil with salt and pepper and the apple cider vinegar. Add parsley and coriander leaves.
Pour the dressing over the lentils salad, mix well. Let it sit for 5 minutes.
Mix again, serve and enjoy!
