So refreshing and delicious, this Pineapple and Kale Lemonade will work wonders!
Why is it good for me?
Pineapple
This delicious fruit is rich in vitamins (vitamin C, A and folate), fibre, minerals (potassium and manganese) and phytonutrients. While pineapple is rich in natural sugars, it is also 86% water and low on the glycemic index, therefore considered a good choice also for people with diabetes.
Raw pineapple contains an enzyme called bromelain which has been at the centre of many scientific studies for its amazing properties (see here).
Kale
Leafy, dark green vegetables such as kale are among the most powerful plants on the planet.
Kale belongs to the Brassica family (cruciferous vegetables), which has been studied for its high antioxidants content and anti-inflammatory properties.
Kale is an excellent source of sulforaphane, which can help detoxification (see here).
Kale is also a great source of calcium, vitamin C and K and chlorophyll.
The mild flavour of kale complements well with other vegetables making it one of the best options for juicing.
Cucumber
So refreshing, cucumber is well known in traditional herbal medicine for its cooling effect. Even in hot weather, the inside of the cucumber is much cooler than the outside air (the old say “cool as a cucumber” is based on science!).
Cucumber is an excellent source of vitamins K, C and Bs, and important minerals such as potassium, copper, magnesium, molybdenum and phosphorus.
Cucumber is very rich in antioxidant and it has anti-inflammatory properties.
An important hydrating food, cucumber will restore the electrolyte balance while helping the body with much needed nutrients.
Lemon
Lemon is highly alkalising and one of the most effective and inexpensive fruits for cleansing and detoxifying our body.
Its high content of vitamin C and other antioxidants will also improve our immune system functions and overall health.
Did you know? Lemons produce more juice when kept at room temperature.
