Salted Apricot Yummies
These are awesome!
These salted apricots yummies will put you in a festive mood, no matter what 🙂
- 200g organic and unsulphured dried apricots, chopped
- 5 tbsps raw organic cacao powder or 150g organic dark chocolate (85% at least)
- 2 tsp organic cold pressed coconut oil
- 1¼ tsp good quality sea salt
- 1 tsp organic vanilla extract
- 2 tbsp hot water
Place the chopped apricots in a food processor with the coconut oil, salt, vanilla and hot water and blend until smooth.
With the help of a teaspoon, take some apricot mixture and roll it with your hands to form little balls, and place them on a plate lined with parchment paper. If the mixture is too runny, pop it in the freezer for 5 minutes and try again.
Freeze these sweeties for at least 20 minutes.
In the meantime, prepare the chocolate dip, by slowly melting the dark chocolate over low heat using a double boiler. I usually use a small saucepan with a bit of water, and on top I place a bowl with the chocolate (bainmarie)
If you are using raw cacao powder, follow the same bainmarie method by placing the cacao in a bowl with a tsp of coconut oil and a tsp of organic maple syrup or good quality honey. Place the bowl on a saucepan with some water in it, and mix gently over low heat until completely melted.
One at the time, dip the little balls in the chocolate, let any excess run off and place them back on the same plate.
Once the chocolate has set, you can go for a second dip for a thicker chocolate coating.
Place the apricots yummies back in the freezer for 20 minutes to set.
Enjoy them anytime!
Store in an airtight container in the fridge.
